Welcome to Spring! As we emerge from the rain, the snow and the Olympic Games, the kitchen team are busy preparing the new spring menu. Daniel brings to the kitchen some fantastic culinary ideas that will be sure to tempt you, such as Crab and Avocado Tian, Venison with fresh asparagus and Kakadu Plum jus, Kangaroo carpaccio and garlic fried yabbies! To finish it all off, choose from our fantastic range of house made desserts, or indulge in a Fusspot's sharing dessert platter if you can't decide.

Join us in the valley for a breath of fresh air, some lazy afternoons on the balcony sipping some wine and enjoying the Yarra Valley Platter that tastes much better on the balcony in the sunshine.

Remember our Gazebo dinners in summer: $95 per person for your own candlelit table in the gazebo amongst the vines: 3 course dinner and a bottle of wine. Not only a great idea for a romantic surprise, but it can accommodate a table of up to 10 guests…what a unique idea for a special celebration with friends. Book early this year!!

Don't forget Wallace House for accommodation. Located at the Wallace Road end of the property, it is just a short stroll down the garden path and over the bridge to the restaurant and cellar door. Dinner, bed and breakfast packages are available for $320 per couple. Further information.

Welcome to Rob Franklin, our new Apprentice Chef. Rob joined us at the start of September and we look forward to him being a part of our kitchen team as he embarks on a new culinary journey. Rob's food passion is French cooking, but is also very keen to learn more about our local Yarra Valley and Australian indigenous produce.

Chef's Table Dinner #9

Our Roast Dinner was the last for 2008 as we now head into the busy silly season. Don't despair if you haven't been able to get to one yet, mark Friday 23rd January in your diaries! To celebrate Australia Day we will be having an Aussie BBQ for our next dinner. Weather permitting this will be a casual Alfresco night under the stars with a band playing. $78 per person will include pre dinner canapes, bbq feast, dessert and cheese platters with matched wines and beers all accompanied by live music.

Animal Aid Fundraiser - Rustic Charm Dinner Friday 7pm, 10th of October

A local cause that has been supported by Rustic Charm for the last 5 years is Animal Aid in Coldstream. I recently visited with my children to show them the other side to pet ownership and human nature, and it was a real eye opener to them too! Animal Aid houses over 5000 animals each year and operate with approximately 170 volunteers across all divisions. In particular, I was touched by the Pets in Peril program.

Family pets are often used as bargaining tools to coerce and control women into staying in violent relationships. They stay out of fear for their pets' safety. Refuges and emergency housing are obviously not in a position to accept pets due to their communal nature, so there must also be refuge for the pets that get caught up in the middle of these tragic situations. Over the past twelve months Pets in Peril program has assisted 57 individual animals. 20 cats, 29 dogs, 5 puppies and 3 chickens, yes chickens. The program is not limited to just dogs and cats it can cater to a wide variety of domestic pets and small livestock.

Animals are housed for up to 28 days, the women are charged a nominal fee of $2 per day per animal and if animals require vaccination, they are charged cost price for the vaccine. These charges do not come anywhere close to covering the cost of the boarding, flea and worming treatments involved and Animal Aid is currently carrying the financial burden of offering this service.

Wild Cattle Creek Wines

The Warburton Hwy Shedfest Wine & Food Festival is held on the second weekend of October (11th and 12th) - be sure not to miss a great weekend at Wild Cattle Creek with wine, food and music by Mainstream. Read More!

The festival kicks off at 11am both days and runs through to 5pm. Entry to all 10 participating wineries is free and this year a free touring bus is also operating, with a different timetable for the Saturday and Sunday. Bus bookings are essential and for more information on the Shedfest bus phone 5964 2016. Wine tasting is available at Wild Cattle Creek all day and you'll find some fabulous Shedfest wine specials on offer at our Cellar Door. Shedfest is the Warbie Highway's version of a fun and relaxed wine and food festival - mark the dates on your calendars!

We've still got 2006 Sauvignon Blanc to clear out at the price of $80 for 12 bottles, it's great value as a quaffer! Avail abe at the Cellar Door only.

Recipé

This vegetarian dish has been popular over winter, and regretfully it will disappear from our menu this week! But for all of those who still wish to enjoy it, we have been able to get Daniel to share his recipe. This dish also goes great with Wild Cattle Creek Sauvignon Blanc!

 

Goats Cheese & Leek Cheesecake

Ingredients

500gm Goats Cheese 500gm cream cheese
5 eggs 1 large leek
100gm grated parmesan cheese 200gm rolled oats
20-30gm butter (melted) Salt & Pepper to taste

Method

  1. Slice and sauté leek in butter until transparent
  2. Pre heat oven to 150c
  3. Use enough melted butter to combine oats and parmesan cheese to form a base in a small springform tin.
  4. Using a food processor, combine cream cheese, goats cheese and leek thoroughly. Season to taste.
  5. Pour over base then bake in oven for 20 minutes, or until set firm.
